Tomato Salad Red Onion, Dill & Feta

• ½ red onion • 250gr. Nature Choice Cherry Tomatoes • 1 clove garlic • Flaky sea salt and freshly-ground black pepper • 2 tablespoons red wine vinegar • ¼ cup extra virgin olive oil • 1 red bell pepper, seeded and cut into 1-inch chunks • ½ cucumber, thinly sliced • 1 cup kalamata olives, pitted • ¼ cup fresh dill, roughly chopped • ¼ cup fresh mint, roughly chopped • 1 cup crumbled feta cheese

Tomato Salad with Red Onion, Dill and Feta

We will start slicing the red onion and putting the slices in a bowl of cold water during 15 minutes while we cut up the rest of the vegetables and then we add our Nature Choice Cherry Tomatoes cut in half pieces. After that we’ll drain the onion.
Then we mix the garlic, a pinch of salt, and the vinegar in a large mixing bowl, and we’ll drizzle in the olive oil while whisking.
We will continue adding the red onion, red pepper, cucumber, olives, and herbs and let marinate for 10 minutes, and after that, we’ll add the tomatoes and feta, and toss gently to combine.
